Cookies for the Cure

The boys' daycare is having a Breast Cancer Bake Sale today in honor of a sweet office worker that has been battling breast cancer. Ms. Kim is a very sweet, nurturing woman and to be honest, I did not even realize she was batting this disease until Ms. Gwen planned the Walk for the Cure and Bake Sale in her honor. I asked Ms. Gwen if we could contribute to the sale by making these and she was very happy with the suggestion (and the boys were SUPER excited to get to help in the kitchen)!
With the help of their daddy, the boys mixed....
and flatted the cookie dough....

Daddy cut the dough into strips & shaped it into ribbons (I know, how AWESOME is he!!)....
and I made them look pretty for the bake sale!
After cooling overnight, I bagged into into plastic baggies and Macklin helped with the clean up! The kids are donating the proceeds from their bake sale to the Susan G. Komen For the Cure Foundation in Ms. Kim's honor!!!!

Thanksgiving Prep

Hello there--you miss me? With the long Thanksgiving weekend, I decided to step away from the computer and give you a few recaps of our holiday once it was all over. We enjoyed our Thanksgiving and are grateful for friends, family and our sanity! After four trips to the grocery store, two trips to Wal-mart and several "other" stops in-between, we were finally ready to start cooking late Wednesday afternoon. Here's a picture of my prep station.....
We usually spend our Thanksgiving in Tuscaloosa at my parents house and then cook a smaller meal the following day at our house. This year, our Thanksgiving plans included traditional Thanksgiving dinner at Ray's sisters house as Ray's parents were in town from Oregon. We decided to prepare potato rolls, corn casserole and banana pudding as our meal contribution. For Friday, we were cooking a turkey, my grandmother's dressing, green bean casserole, three cheese macaroni & cheese, pumpkin bread and carrot cake. We bought our rolls, mixed the corn casserole for baking Thursday morning, and made the banana pudding. To be on-top of Friday's menu, we prepared two pans of homemade cornbread and got to work making our very first dressing. Jackson was very eager to help!
It was nice to get several dishes prepped for cooking and relax for the night. We played trains with the boys and enjoyed a nice, pre-Thanksgiving evening!

Weekend Roundup

Typically, I have a long list of weekend activities and fun to blog about on Monday morning. However, this weekend was rather quiet and laid back for us and I must say, it was nice. We didn't have a bunch of projects, nor did we have multiple birthday parties or events to rush to--it was a fun, family weekend! Friday we enjoyed a nice family dinner at home. Jackson requested sloppy joe's and fruit and I was happy to comply with his request. Saturday morning we had a nice trip to the park, played with trains, made some chicken enchilada soup, and watched Thomas the Tank Engine Halloween specials. We rounded the day out with a little college football and were happy to see the Tide get a victory on the road against the Vols, 41-10. Sunday we made a visit to the Birmingham Zoo for some train rides (we always ride the train twice), a carousel ride and some animal observations. After nap-time, the boys had a blast making Halloween cupcakes. Check out their kitchen and baking skills (mommy was quiet impressed)....

Adding the oil and water
Getting ready to crack the eggs (this was their favorite step)
Mixing the ingredients
Watching Daddy use the electric mixer

Eagerly awaiting their finished product
Mommy applied the icing but they did the sprinkles
Macklin enjoying a bite

Jackson didn't want to have any cupcakes but asked to take some to school to share with his teachers and friends--how sweet!! Pin It
